I used Boca Original Chik'n veggie patties because that's all the chik'n I had.
But I recommend MorningStar Farms Vegan Chik'n Strips. It's my favorite brand :)
Ingredients:
Tortillas, cooked corn, vegan chik'n, cooked black beans, black pepper, red crushed pepper, shredded 4-cheese Mexican, Francesco Rinaldi Chunky Garden Sauce.
Before getting started heat up the chik'n & cut it into little peaces.
1) Add cooked corn, cooked black beans & vegan chik'n to all your tortillas. Add a bit of black pepper. 2) Add sauce to the bottle of the casserole dish. 3) Roll up the tortillas & place them into the dish with the folded flap on the bottom. 4) Add sauce on top. 5) Add shredded cheese. Red crushed pepper is an option. 6) Place the casserole dish in the oven at 350° until the cheese melts & the insides are heated well.
Time to dig in.

so. i can't even tell you how happy i am to see this recipe today of all days. we've had some boca burgers in the freezer that've gone uneaten, but we just don't feel like getting all the fixings to make actual veggie burgers. ya know? plus, we're vegetarians, so this is just a good one to catalog for later. : ) thank you, thank you!
